I try to have vegetables at breakfast, lunch, and dinner. One of my favorite breakfasts is a slice of whole wheat toast with avocado, and then an egg with sauteed spinach and squeezed lemon juice. For lunch, I try to eat a salad, which you can add beans or some sort of seafood and different vegetables as well. For dinner, have a piece of salmon with sweet potato and broccoli. Those three meals would provide you with a lot of those nutrients that keep the mind healthy.
